Honey Peanut Butter Cookies
What’s better than peanut butter cookies? Peanut butter cookies with added honey! These Honey Peanut Butter Cookies are big, soft, and very easy to make. Add some coarse salt on top for the perfect sweet and salty combination. Just make sure you leave some time to chill the dough.
Make the Cookie Dough
Follow these simple steps to make the honey peanut butter cookie dough:
In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
In a large bowl using a stand or handheld mixer fitted with the paddle attachment, beat together softened butter and peanut butter on medium speed until combined and smooth.
Add brown sugar and honey and mix on medium-high speed until light and fluffy.
Add one egg and vanilla extract and mix until combined.
Add the dry ingredients to the wet ingredients and mix until just combined.
Portion and Chill the Dough
Line baking sheets with parchment paper or silicone baking mats.
Right after mixing, this dough will be very soft. Use a large cookie scoop to portion out the dough. Place the dough balls on the prepared baking sheets about 2 inches apart. Loosely cover with plastic wrap and refrigerate for at least 1 hour.
Bake the Cookies
While the dough is chilling, preheat the oven to 350°F.
If desired, sprinkle coarse salt on the cookie dough balls, gently pressing into the dough to make sure it adheres.
Bake the cookies for 18-20 minutes until the edges are golden brown. Allow them to cool on the pan for at least 10 minutes before transferring to a wire rack to cool completely. The cookies will continue to set as they cool. If you remove them from the pan too soon they may fall apart.
Store leftover cookies in an airtight container in the refrigerator for 5-7 days.

- 1/2 cup brown sugar
- 1/4 cup honey
- 1 egg, room temperature
- 1 and 1/2 tsp vanilla extract
- optional: coarse salt for topping
